why would you use colored fondant to color gumpaste instead of icing gels?

I noticed that some people would use colored fondant to color there gum paste instead of using icing gels to color the gum paste. Why is that? I would think that the icing color would give a better color in the end result. Or is this just a personal preference?

  1. You get a deeper, truer color that will last longer if you use pre-colored fondant to color your gum paste. Plus sometimes, if you are trying to make a deep or bright color tone, you'd have to use a lot of icing color to get the color right. It's also less messy to use fondant, which is nice. Certain colors tend to fade more than others. Purple/violet tends to fade easily, becoming more of a blue shade......it loses that red tone. When making purple gum paste using pre-colored fondant, it is suggested to add a little bit of pink/hot pink fondant along with the purple to help combat this potential color loss/fading. Also, you should always take care to keep the fondant covered/away from light to keep the colors true. You can always use the icing color in a pinch or when you are creating a custom color for which pre-colored fondant is not available, but you may not get as good a result/as deep color.
